recipe: skinny pumpkin granola

Phew! These past few days have been very, VERY busy and stressful! I can share more very soon (hopefully!), but the stress and craziness was most welcome. More importantly, I’ve been wanting to finalize this post and share ALL WEEK. So today, I’m doing just that!
I found this recipe after searching for a healthy granola to make & take to my very first food swap. I’ll share more about the swap later this week, but I wanted to give you the granola recipe first!
I love several things about this granola. First, the recipe calls for very little sugar…so hello healthy granola! Secondly, I’ve been wanting to experiment with quinoa. And finally, why not use this season’s big ingredient? Pumpkin!
After taking a stab at making my own granola, I am ashamed that I ever bought it at the store. Making it at home is super easy and WAY cheaper than buying name brands. You might have to make some investments on a few ingredients, but doing so will stock your pantry for months to come in the granola making world!

Skinny Pumpkin Granola (print recipe)
Makes 12 servings (1/3 cup per serving) - Prep Time: 10 minutes - Cook Time: 30 minutes - Adapted from Skinny Taste
Ingredients
1/4 cup uncooked quinoa, rinsed well and pat dry with paper towel
1 1/2 cups rolled oats (not the instant variety)
1/4 cup ground flaxseed
1/4 cup sunflower seeds (or another seed)
1/4 cup shaved almonds
1/4 cup chopped walnuts
1/2 cup dried cranberries
1/4 cup honey (or real maple syrup)
1/3 cup pumpkin puree
1 tsp oil (coconut or canola)
1 tsp pumpkin spice (or more to taste)
1/4 tsp cinnamon
pinch kosher salt
1/2 tsp vanilla extract
Preheat oven to 325 degrees.
- Spread oats and quinoa out on a baking pan. Toastin the oven 10 minutes, stirring once.
- Remove the oats from the oven, pour the toasted oats into a medium bowl and add the ground flaxseeds, sunflower seeds, pecans, walnuts and pecans. Mix well.
- In a second medium bowl, combine the honey, pumpkin puree, oil, pumpkin spice, cinnamon, salt and vanilla. Pour over oats and stir together with a spatula until evenly coated.
- Spread back onto a baking sheet and bake an additional 25 minutes, or until golden.
