recipe: no-bake chocolate & oatmeal drop cookies

Remember how I said I stress bake? (no? you don’t? well, you can read it here!)
Well, these past few days have been stressful. And I’ve been baking.
I’ve also been working out like crazy, unable to eat, maybe/might have possibly cried a few times…stress is such a bad friend to have!
But what can I say. Life is stressful. And stress-baking is what I do.
Except you don’t really have to bake these cookies. In fact, you’ll definitely mess them up if you try to bake them!
So, because life has been so stressful, I’ll leave you with a few thoughts and then hush up and let you have the recipe:
- Definitely splurge and use the brand name oatmeal. I’ve tried using store brands, and I can definitely say the brand name is better!
- The instant coffee move is ESSENTIAL. I honestly don’t know why I thought of it, but it’s genius!
- Patience is a virtue. Aka, you have to wait for these little guys to harden up before you can eat them. I had to wait about an 45 minutes to an hour.

No-Bake Chocolate & Oatmeal Drop Cookies (print recipe)
Adapted from Brown Eyed Baker
Makes roughly 3 dozen (36 cookies) - Prep Time: 10 minutes - Cook (wait) Time: 45 minutes
What You’ll Need:
- 1/2 cup (1 stick) butter
- 2 cups granulated sugar
- ½ cup milk
- 4 tbsp. cocoa powder
- 2 tsp. instant coffee
- ½ cup peanut butter
- 2 tsp. vanilla extract
- 2 tsp. instant coffee
- 3 cups quick-cooking oats
1. Add the first five ingredients (through the instant coffe) to a 4-quart saucepan.
2. Bring to a rolling boil and let boil for 1 minute.
3. Remove from heat.
4. Stir in the peanut butter and vanilla until smooth, then stir in the oats.
5. Drop by heaping tablespoons onto wax paper-lined baking sheets.
6. Let cool until set.

These cookies are great for occasions when you’re responsible for bringing a dessert but don’t want to put in a ton of effort. I make them for Eric and his roommates often. They really love them!
